The objective of this work was to evaluate the effect of three breeding systems on the organoleptic quality and the physico-chemical composition of kids goat meat. Were used thirty newborn baby goats of 3.35 kg ± 0.65 kg crossed Parda Alpina x Undefined Race (SPRD) submitted to three breeding systems: Traditional system-TS; Intensive Feeding System without Concentrate- IS and Intensive Feeding System with Concentrate- IS+C. When the goats reached 12 kg, the animals were slaughtered and chemical and physical analyzes were performed in the evaluation of the meat and sensorial. With the objective of evaluating the relative development of live weight (LW) components, commercial meat cuts and carcass tissues, 40 Saanen male kids were used. These animals were slaughtered when they reached 5.0, 12.5, 20.0, 27.5 and 35.0 kg of LW. The carcass was sectioned as follows: shoulder, neck, 1st to 5th rip, 6th to 13th rip, brisket, chump and leg. The leg was dissected into bones, muscle and fat. An allometric equation was used Y=aXb for relative development estimation. Osseous tissue showed a precocious growth, intermediary muscle and adipose tissues had a late growth, being the subcutaneous fat the latest. It was evaluated in this study the environmental effects on body weights of goat kids from birth to 150 days of age of Tunisian local goat population, on the basis of 1,656 records obtained from the Arid Areas Institute of Médenine, Tunisia, during 2001-2005. Except for birth weight, individual records were adjusted for standard ages (30, 60, 90, 120 and 150 days) using either extrapolation or interpolation on field data.
